We’ve picked up some live mud crabs, commonly found at markets, to show you the best way to prepare them at home. While fall is ideal for male crabs with rich roe, spring brings female crabs with abundant eggs. Step 1
To safely handle live crabs, it’s best to first stun them. Submerge them in cold tap water or ice water for about 10-15 minutes until they become inactive. For crabs with sawdust (톱밥), gently brush off most of it and then rinse them under running water before placing them in the cold water bath. This makes them much easier and safer to clean.
Step 2
While you can cook crabs with their legs attached, they can be cumbersome to eat. A great tip for easier preparation and eating is to remove the legs entirely. These removed legs can be saved and used later for making a flavorful seafood broth, adding depth to soups and stews.
Step 3
Removing the legs not only makes the crab easier to handle and eat but also allows steam to circulate more effectively during cooking, ensuring a more evenly cooked and delicious result. The detached legs are a fantastic ingredient for enriching broths for dishes like fish cake soup (어묵탕) or soybean paste stew (된장찌개).
