Sea cucumbers often come packed in seawater, which means they might have some impurities on their surface. Gently rub the body of the sea cucumber with your hands to wash it thoroughly. Treat it like a gentle skin massage to clean it effectively.

Once washed clean, place the sea cucumber on a cutting board. You’ll notice it starts to plump up and become thicker as it rests. This process makes the sea cucumber wonderfully firm and plump.

Using a knife, carefully trim off about 1 cm from both ends of the sea cucumber (the mouth and the anus). These parts can be tough or slightly bitter, so removing them ensures a better taste and texture.

Next, make a slit lengthwise along the belly side (the softer part) of the sea cucumber. The internal organs will come out. If you have a very fresh sea cucumber, some of the stringy innards can be saved and cooked, but for general preparation, it’s best to remove all the insides. After cleaning out the innards, quickly rinse the sea cucumber under running water one more time to remove any remaining debris.
