  • 18g matcha powder (use a generous amount for a vibrant green color!)
  • 6g baking powder
  • 100g unsalted butter, softened to room temperature
  • 85g granulated sugar
  • 1 large egg, at room temperature
  • 100g milk, at room temperature
  • 55g chocolate chips (adjust to your preference)

In a bowl, cream the softened unsalted butter until smooth using a whisk. Then, gradually add the granulated sugar in 2-3 additions, continuing to whisk until the butter and sugar mixture becomes light and fluffy, resembling a creamy texture. The sugar will dissolve as you mix, making the butter softer.

Lightly beat the room-temperature egg and gradually incorporate it into the butter-sugar cream, mixing well after each addition. It’s important to mix thoroughly to prevent the egg from separating. Next, sift the cake flour, matcha powder, and baking powder together into the bowl. Using a spatula, gently fold the dry ingredients into the wet ingredients by cutting through the batter as if drawing the number ’11’. Be careful not to overmix; stop as soon as you no longer see streaks of flour, as overmixing can lead to tough muffins.
