  • Well-fermented Napa Cabbage (Kimchi) 1/6 head
  • Lean Pork 200g
  • Tofu 1/2 block
  • Onion 1/2 medium
  • Green Onion 1/2 stalk
  • Red Chili Pepper 1 (Optional, for extra spiciness)
  • Minced Garlic 1 Tbsp
  • Broth (anchovy or kelp) or Rice Water 3 cups
  • Ground Black Pepper a pinch
  • Red Pepper Powder 1 Tbsp (or to taste)
  • Cooking Oil 1 Tbsp

To remove excess fat from the pork, blanch it in boiling water for about 2-3 minutes. Rinse the blanched pork under cold water and pat it dry with paper towels. This step ensures a cleaner, less oily broth for your kimchi stew.

Prepare the complementary ingredients for your kimchi stew by cutting them into bite-sized pieces. Slice the tofu into 1.5cm thick pieces, julienne the onion, and diagonally slice the green onion. If using red chili peppers, thinly slice them. Cut the well-fermented kimchi into 3cm wide strips, removing excess stem if any.

Heat 1 Tbsp of cooking oil in a pot over medium-low heat. Add 1 Tbsp of minced garlic and sauté until fragrant to release its aroma. Once the garlic is aromatic, increase the heat to high and add the prepared pork. Sear the pork until its outer surfaces are browned.

Once the pork is partially cooked, add the sliced kimchi to the pot and stir-fry them together. Continue to sauté for about 2-3 minutes until the kimchi becomes slightly translucent and absorbs the flavors. Season with a pinch of black pepper at this stage to help eliminate any porky odor.

Pour in 3 cups of the prepared broth (or rice water) and bring to a boil over high heat. Once the stew is boiling, stir in 1 Tbsp of red pepper powder and ensure it’s well dissolved. Add the tofu, sliced onion, green onion, and optional red chili pepper. Reduce the heat to medium-low and simmer for 10-15 minutes, or until the tofu is cooked through and the stew has thickened slightly. Your delicious kimchi stew is now ready to be served!
