Today, I’ll share a detailed recipe for a delicious braised enoki mushroom and tofu dish, introduced on ‘Cheongginuseol,’ known to help boost immunity. Follow along easily and deliciously!

Main Ingredients

  • 1/2 block firm tofu (for pan-frying)
  • 1 handful enoki mushrooms (approx. 100-150g)
  • 1/4 zucchini

Cooking Instructions

Prepare the firm tofu by slicing it into thick pieces, about 1-1.5 cm thick. Be careful, as slicing them too thinly might cause them to break apart during cooking.

Trim the tough base of the enoki mushrooms. If the mushrooms are too large, gently tear them apart with your hands into bite-sized pieces. Smaller mushrooms can be left whole. Lightly rinse them under running water and pat them dry.

Wash the zucchini thoroughly, then slice it into semi-circles or crescent shapes, about 0.5 cm thick.

In a small bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, 2 tablespoons of gochugaru, 1 tablespoon of minced garlic, and 100ml (about 1/2 cup) of water. Whisk well with a spoon to create the braising sauce. You can adjust the amount of gochugaru according to your spice preference.

In a braising pot or pan, place the sliced tofu at the bottom. Arrange the prepared enoki mushrooms evenly over the tofu. Pour the prepared braising sauce over the ingredients. Cover the pot with a lid and simmer over medium-low heat for about 5 minutes, or until the ingredients are tender. You can start on high heat to bring it to a boil, then reduce to medium-low.

After simmering for about 5 minutes, add the sliced zucchini on top of the tofu and mushrooms. If the liquid has significantly reduced, you can add a little more water.

Continue to cook for another 2-3 minutes, either with the lid on or off, until the zucchini is tender. Periodically, spoon the braising liquid over the zucchini, tofu, and mushrooms to ensure even flavoring and cooking. Once the zucchini is cooked, turn off the heat and serve.
