For a revitalizing meal that doubles as a healthy home-cooked dish for the kids and husband, I’ve prepared ‘Chives Chicken Soup’. It’s made in a style similar to Samgyetang, making it easy for children to enjoy. I used a 1.2kg pack of chicken suitable for stir-frying, and it cooked up so tender and delicious! The succulent chicken legs were shared equally among my daughters and husband. It felt so comforting and warming to eat rice steeped in the hot broth – it truly felt like we were recovering! Using chicken for stir-fry made the preparation so much easier and saved time.   • 1 stalk green onion
  • 1/2 onion
  • 2L water
  • 2 Tbsp soju or cooking wine

  • 60g chives

Prepare the aromatics that will add depth to the chicken soup. Peel and quarter the onion. Wash and roughly chop the green onion. Leave the whole garlic cloves unpeeled.

It’s crucial to wash the pre-cut chicken for stir-fry thoroughly. Rinse it well under running water. Place the cleaned chicken, prepared onion, green onion, and whole garlic cloves into a large pot. Pour in 2 liters of water. Add 2 tablespoons of soju or cooking wine to help remove any gamey odors.

Initially, bring the pot to a rolling boil over high heat with the lid off. As it boils vigorously, skim off any impurities or foam that rise to the surface periodically. Repeating this for about 5-10 minutes will result in a clearer broth.
