  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Sugar
  • A pinch of Oligodang (corn syrup), to taste
  • A pinch of Oyster Sauce, to taste

Cooking Instructions

First, prepare about 3 servings of rice. Rinse the rice gently under running water a couple of times until clean. Then, soak it in plenty of water for 20-30 minutes. Soaking the rice will make the final cooked rice extra soft and delicious.

Use well-fermented, slightly sour kimchi for the best flavor. Finely chop about 300g of kimchi. If your kimchi is very watery or has too much seasoning paste, it might make the rice too salty. It’s best to drain the kimchi slightly before chopping.

Heat a deep pan or wok over medium-high heat. Add the 400g of thinly sliced pork belly and stir-fry until it’s rendered most of its fat and becomes nicely browned. This step is crucial for developing the rich pork flavor.

Once the pork belly is mostly cooked, add 1 tablespoon of sugar. Stir-fry for about 1 minute more, allowing the sugar to caramelize slightly and coat the pork. This adds a subtle sweetness and enhances the savory notes.

Now, it’s time to add the seasonings. Add 1 tablespoon of gochugaru, 1 tablespoon of soy sauce, 1 tablespoon of mirin, and 1 tablespoon of minced garlic. Stir-fry over medium heat for about 2 minutes until the aromatics are fragrant and everything is well combined with the pork.
