Cooking Instructions
Step 1
Begin by peeling the potatoes and cutting them into roughly 2-3 cm cubes. Thinly slice the onion. Having your ingredients prepped makes the cooking process much smoother.

Place the cubed potatoes in a pot and add enough water to cover them completely. Boil the potatoes until they are very tender and easily pierced with a fork, which usually takes about 15-20 minutes. Ensure they are thoroughly cooked.

In a separate pan, melt a little butter over medium-low heat. Add the sliced onions and sauté until they become translucent and slightly sweet. Cooking the onions well is key to developing a deeper flavor for the soup.

Transfer the boiled potatoes, sautéed onions, and 1/2 cup of milk (approx. 100ml) into a blender or food processor. Blend until completely smooth and creamy, with no lumps remaining. Be careful as the ingredients are hot.

Pour the blended mixture back into the pot. Add the remaining 1.5 cups of milk (approx. 300ml). Stir well and bring the soup to a gentle simmer over medium-low heat. Stir frequently to prevent it from sticking to the bottom of the pot.

Once the soup is heated through and has thickened slightly, add the 2 slices of processed cheese. Stir until the cheese is fully melted and incorporated into the soup. Season with salt to your taste. It’s best to add salt gradually and taste as you go to avoid over-salting.
