Sweet and savory stir-fried dried shredded squid: a staple side dish in our home! Today, I’ll share our family’s secret recipe for making it incredibly delicious. Just a spoonful of a special ingredient will elevate this dish to another level. It’s perfect for making mini gimbap that even picky eaters will love!

Mini Gimbap Ingredients

  • 120g dried shredded squid (Jae-mi-chae)
  • A small amount of cooked rice (approx. 1.5 bowls)
  • A small amount of gimbap seaweed sheets (cut in half)
  • A small amount of seasoned egg omelet (jidan)
  • A small amount of kimchi

Stir-fry Seasoning

  • 200g dried shredded squid (for pre-seasoning)
  • 3 Tbsp mayonnaise
  • 1 Tbsp minced garlic
  • 4 Tbsp gochujang (Korean chili paste)
  • 4 Tbsp honey
  • 1.5 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp soy sauce
  • 5 Tbsp mirin (rice wine)
  • 2 Tbsp sugar
  • 1 Tbsp strawberry jam

Cooking Instructions

Step 1

1. Rinse the kimchi lightly under running water to remove excess saltiness. Since the dried shredded squid is already seasoned, using very salty kimchi can make the final dish taste dull.

2. Prepare the seasoned egg omelet (jidan) by whisking eggs, cooking them thinly, and then cutting them into thin strips or small pieces suitable for gimbap.

3. Rinse the dried shredded squid under cold water, gently squeeze out excess water, and then soak it in water for about 10 minutes. This soaking process softens the squid, making it tender and easier to chew.

4. After soaking, squeeze out as much water as possible from the softened dried shredded squid. Then, add 3 tablespoons of mayonnaise and mix well. The mayonnaise coats the squid, helping the seasoning adhere better and adding a rich, creamy flavor.

5. Lightly oil a pan and stir-fry the minced garlic over low heat until fragrant. Sautéing the garlic first will infuse the stir-fry with a wonderful aroma.

6. In a bowl, combine 4 tablespoons of gochujang, 4 tablespoons of honey, 1.5 tablespoons of gochugaru, 1 tablespoon of soy sauce, 5 tablespoons of mirin, and 2 tablespoons of sugar. Mix well to create the seasoning paste. Now for the secret ingredient: add 1 tablespoon of strawberry jam! The subtle fruity notes from the jam will complement the spicy seasoning, enhancing the overall flavor of the dried shredded squid.

7. Add the sautéed minced garlic and the prepared seasoning mixture to the mayonnaise-coated dried shredded squid. Mix thoroughly until everything is evenly coated. Finish by sprinkling some sesame seeds. Your delicious sweet and spicy stir-fried dried shredded squid is now ready! It’s also a fantastic side dish for rice.

8. Now it’s time to assemble the mini gimbap. Spread a thin layer of cooked rice onto a half-sheet of gimbap seaweed. Place these ingredients in the center and tightly roll up the gimbap. Using half-sheets of seaweed makes perfect-sized mini gimbap.
