Japanese-Style Cucumber Salad
Super Simple Japanese Cucumber Salad Recipe: A Refreshingly Tangy & Sweet Treat!
Today, I made a simple Japanese-style cucumber salad to serve as a side dish. It’s incredibly easy and quick to prepare, so I wanted to share it with you all. Enjoy this refreshing and delicious cucumber salad!
Ingredients- 2 cucumbers
- 30ml soy sauce (2 Tbsp)
- 15ml mirin (sweet rice wine) (1 Tbsp)
- 15ml sugar (1 Tbsp)
- 60ml rice vinegar (4 Tbsp)
- 5ml salt (1 tsp)
- 15ml sesame seeds, toasted or crushed (1 Tbsp)
- 4ml red pepper flakes (1/2 tsp, adjust to taste)
Cooking Instructions
Step 1
Wash 2 fresh cucumbers thoroughly. Using a vegetable peeler (or mandoline), thinly slice one of the cucumbers into ribbons or thin strips. I tried making two different shapes for fun!
Step 2
For the second cucumber, slice it into thin, round coins. Preparing the cucumbers in two distinct shapes adds a delightful variety in texture.
Step 3
Place both types of sliced cucumbers together. It’s interesting to compare the textures and flavors when you eat them later!
Step 4
Transfer all the prepared cucumbers into a large mixing bowl. Now it’s time to season them wonderfully.
Step 5
In a separate small bowl, combine the dressing ingredients: 30ml soy sauce, 15ml mirin, 15ml sugar, 60ml rice vinegar, and 5ml salt. Whisk until well combined. Divide this dressing evenly between the two bowls of cucumbers.
Step 6
To the cucumbers sliced with the peeler, add a pinch of red pepper flakes for a beautiful touch of color and a hint of spice. If you enjoy a bit of heat, feel free to add more.
Step 7
Gently toss everything together until the cucumbers are well coated with the dressing. This salad is best enjoyed after it has had time to marinate. For optimal flavor, refrigerate for at least 1 hour before serving, allowing the sauce to fully meld with the cucumbers. Served chilled, it’s incredibly refreshing!
