  • Gochugaru (Korean chili flakes), 2 Tbsp
  • Vinegar, 4 Tbsp
  • Soy sauce, 2 Tbsp
  • Maesil (Plum extract), 2 Tbsp
  • Sugar, 2 Tbsp
  • Apple, 1/2 (finely grated)

Cooking Instructions

Step 1

Boil the eggs to your desired doneness: about 6 minutes for soft-boiled and 11 minutes for hard-boiled. Immediately rinse the boiled eggs under cold water to stop the cooking and cool them down.

Step 2

Julienne the lettuce, cabbage, cucumber, and carrot into similar lengths that will mix well with the Jjolmyeon noodles. This adds a refreshing crunch.

Step 3

Prepare the bean sprouts by trimming any roots or damaged parts. Blanch them in boiling water for about 5 minutes until they are crisp-tender. Be careful not to overcook, as they can become mushy.

Step 4

Drain the blanched bean sprouts and immediately rinse them under cold water. This crucial step helps maintain their crisp texture.

Carefully separate the Jjolmyeon noodles in the water, as they may stick together. Gently loosen any clumps.

Bring a large pot of water to a rolling boil. Add the Jjolmyeon noodles and cook for approximately 2 minutes 30 seconds to 3 minutes 30 seconds. Avoid overcooking to maintain their chewy texture.

Drain the cooked Jjolmyeon and immediately rinse them thoroughly under cold running water. This removes excess starch and ensures the noodles are perfectly chewy and springy.
