Broth & Main Ingredients
  • Beef Broth 400ml
  • Water 400ml
  • Joraengi Rice Cakes 1/2 bag (slightly more)
  • Handmade Dumplings 10 pieces
  • Beef Shank 100g (boiled and prepared)

Cooking Instructions

Step 1

The foundation of a delicious hot soup is a flavorful broth! We’ll be using beef broth that was made previously and frozen. If you don’t have homemade broth, using store-bought is also a great option.

Step 2

One of the stars of this recipe is our homemade dumplings. Using dumplings filled generously with ingredients makes them even tastier. You can also enjoy this recipe conveniently with store-bought dumplings.

Step 3

Pour 400ml of beef broth and 400ml of water into a pot. Add 100g of beef shank that has been pre-boiled and prepared. (The beef adds depth to the broth; you can omit it if not available.) Bring to a boil over high heat initially.

Step 4

Once the broth begins to boil, cover the pot, reduce the heat to medium-low, and let it simmer. This allows the flavors to meld and the ingredients to soften. Covering the pot while simmering helps the broth’s flavor deepen and ingredients become tender.

Step 5

The chewy joraengi rice cakes and flavorful dumplings will create a wonderful harmony. Feel free to adjust the amount of rice cakes to your preference.

Step 6

Before adding the rice cakes to the boiling broth, soak them briefly in cold water. This prevents them from sticking together and enhances their chewy texture. If the rice cakes are very hard, you can blanch them in boiling water for a moment.

Step 7

Here are the handmade dumplings, shaped and ready to cook. Use dumplings of your desired size and filling. Be careful not to let the dumpling wrappers burst while cooking.

Step 8

Finally, prepare 1 tablespoon of Korean soy sauce or fish sauce to add umami, and chopped green onions for a fresh, aromatic finish. Using fresh green onions will provide a better aroma.

Step 9

After the broth starts boiling, let it simmer for about 10 more minutes until the ingredients are cooked through. Taste the broth at this point and adjust the seasoning if needed.

Step 10

First, add the prepared joraengi rice cakes, then carefully place the dumplings into the pot. Lastly, add the chopped green onions and simmer for about 5 more minutes. Since the beef was boiled beforehand with the broth, there’s no need to cook it separately, making the preparation quick and convenient.

Step 11

The addition of beef has made the broth even richer. Sprinkle a little pepper for the finishing touch and turn off the heat.
