Pork Suyuk Ingredients- Pork shoulder or leg meat 500g
- Cooking oil 1 Tbsp
- Soy sauce 7 Tbsp
- Masucobado sugar 4 Tbsp
- Cooking wine (Mirin or similar) 1 Tbsp
- Ginger syrup 1 tsp
- Water 1 liter
- Whole peppercorns
- Herbal sachet (for Samgyetang or similar) 1 pack
- Garlic scapes (optional, for garnish or pickling)

Cooking Instructions
Step 1
Rinse the pork shoulder or leg meat thoroughly under cold running water. If there’s still a lot of blood, you can rub it gently with about 1 Tbsp of soju (or cooking wine) to help remove any remaining impurities and reduce gamey odors. Let it sit for about 10 minutes before cooking.
Step 2
Heat a pan over medium heat and add 1 Tbsp of cooking oil. Sear all sides of the pork for about 1 minute per side until lightly browned. Searing the outside of the pork before boiling is a crucial step that seals in the juices, ensuring a moist and flavorful result. Aim for a slightly more golden-brown sear than shown in the picture.
Step 3
Place the seared pork into a pot. Add the soy sauce, Masucobado sugar, ginger syrup, cooking wine, whole peppercorns, and the herbal sachet. Pour in 1 liter of water, ensuring the pork is fully submerged, and bring to a boil over high heat.
Step 4
For the best results, use a pot with a thick bottom, such as a Dutch oven or cast iron pot. This ensures even heat distribution, leading to more tender boiled pork. (Optional)

Once the water comes to a rolling boil, reduce the heat to medium-low, cover the pot, and let the pork simmer gently for at least 30 minutes, or until tender. Skim off any foam or impurities that rise to the surface during cooking to maintain a clear broth and prevent unwanted odors. If you have garlic scapes prepared for pickling (as the original author did), you can add a few stalks to the pot for extra flavor.
