How to Marinate and Season Beef for Steak: Tenderizing with Olive Oil and Herbs

I’ve chosen Australian Chuck Eye Roll, which is great for grilling. Chuck eye roll can sometimes be quite tough, but with the marination method I’m about to show you, the texture will become surprisingly tender and the flavor will be enhanced, making it incredibly delicious. Essential Ingredients- Fresh Beef (Chuck Eye Roll recommended)
- Extra Virgin Olive Oil
- Dried Herbs (Oregano, Rosemary, etc.)
Cooking Instructions
Step 1
First, it’s crucial to properly remove the blood from the beef intended for steak. Prepare plenty of paper towels, layer them over the meat, and press firmly to absorb as much blood as possible. This step helps reduce any gamey odors and enhances the beef’s natural flavor.
Step 2
After patting the beef dry, use a fork to pierce it all over. These small holes created by the fork will allow the olive oil and herbs to penetrate deep into the meat, magically tenderizing the texture and making it incredibly moist. ♥

Now, we’ll place the prepared beef into a resealable plastic bag (zipper bag). While a container works too, cleaning up oil from a container can be a hassle. Using a zipper bag is convenient for easy cleanup and helps ensure the olive oil coats the surface of the meat evenly.
Step 4
Olive oil plays a vital role in preventing the beef’s juices from escaping during cooking and also in tenderizing the meat. Generously coat the entire surface of the beef with olive oil. ♥ Then, sprinkle your preferred dried herbs like fragrant oregano and rosemary and mix them well with the meat. Marinate this mixture in the refrigerator for at least 1 to 3 days before grilling to enjoy a delicious steak. ♥

Just before grilling the steak, season it with salt and freshly ground black pepper to enhance its flavor. Since the marination process already infuses the meat with herbs and olive oil, seasoning right before cooking is ideal.
