With dining out becoming less frequent, I decided to make my husband’s favorite, Sutei-don (Steak Donburi), at home. From expertly seasoning the steak to achieving that perfect juicy sear, this recipe will guide you to create a delicious donburi that rivals any restaurant’s. You’ll be amazed at how easily you can achieve restaurant-quality flavors right in your own kitchen!
Key Ingredients for Steak Donburi- 300g beef sirloin for steak (choose a thick cut)
- Olive oil, for searing
- Coarse salt, to taste
- Freshly ground black pepper, to taste
- 1 knob of butter, for flavor
- 1/3 onion, thinly sliced
- 1 egg yolk
Umami-Rich Special Sauce Ingredients- 2 Tbsp soy sauce
- 3 Tbsp mirin (sweet rice wine)
- 3 Tbsp water
- 1.5 Tbsp sugar
- 2 Tbsp soy sauce
- 3 Tbsp mirin (sweet rice wine)

Cooking Instructions
Step 1
Begin by seasoning the steak, which is crucial for its final flavor. Gently pat the beef sirloin dry with paper towels to remove any excess moisture. This step ensures a clean flavor without any gamey taste.
Step 2
Season the steak generously with coarse salt and freshly ground black pepper. Then, drizzle with olive oil, ensuring it’s evenly coated. Allow the seasoned steak to sit at room temperature for about 15 minutes before cooking. This helps the meat cook more evenly and become more tender.
