  • Beef (for steak) 100g
  • Cooked Rice 1 bowl (approx. 200g)
  • Sushi Vinegar (Awasezu) 3 Tbsp
  • 1/4 Onion
  • Teriyaki Sauce, to taste
  • Wasabi, to taste

Cooking Instructions

Step 1

First, gently pat the beef dry with paper towels to remove any excess moisture. Then, season it evenly with 1/4 tsp salt, a pinch of pepper, and a drizzle of olive oil. Let the beef marinate for about 10 minutes to allow the flavors to penetrate.

Step 2

Peel the onion and slice it very thinly into fine julienne strips. To remove its pungency and add a refreshing crunch, soak the onion strips in cold water for about 10 minutes. Afterwards, drain them thoroughly to remove all excess water.

Step 3

Heat a pan with a light drizzle of olive oil. Place the marinated beef in the hot pan and sear it on both sides until golden brown. Aim for a nice crust on the outside while keeping the inside juicy and tender – adjust the cooking time to your preferred level of doneness.

Step 4

Once cooked, remove the steak from the pan and let it rest for a moment. Then, cut it into bite-sized pieces suitable for sushi, approximately 3-4 cm long and 1 cm thick. Be careful not to slice it too thinly, as this can cause the juices to escape.

Step 5

Take the warm cooked rice and gently mix in the 3 Tbsp of sushi vinegar. Use a rice paddle to cut and fold the rice, avoiding mashing the grains, until it becomes glossy and well-seasoned. Shape the sushi rice into individual portions by hand.

Step 6

Place a small dab of wasabi onto each sushi rice base. Top it with a slice of the prepared steak, followed by a generous mound of the drained julienned onion. Finally, drizzle teriyaki sauce back and forth over the top to complete these delicious steak sushi bites!
