Salad Ingredients- 1 can (approx. 340g) Canned Corn, drained
- 1/2 Yellow Bell Pepper
- 1/2 Red Bell Pepper
- 1/2 small Onion
Creamy Dressing- 3 Tbsp Mayonnaise
- 2 Tbsp Vinegar (Apple cider or white wine vinegar recommended)
- 1 Tbsp Sugar
- 1/2 tsp Salt
- Pinch of Black Pepper
- 3 Tbsp Mayonnaise
- 2 Tbsp Vinegar (Apple cider or white wine vinegar recommended)
- 1 Tbsp Sugar
- 1/2 tsp Salt
- Pinch of Black Pepper
Cooking Instructions
Step 1
First, prepare the vegetables. Finely dice the yellow and red bell peppers, removing the seeds. Peel and finely dice the onion as well. Aim for a size similar to the corn kernels for a well-integrated texture and pleasant mouthfeel.
Step 2
In a medium-sized bowl, combine the diced bell peppers and onion. Add the drained canned corn. You can drain the corn thoroughly or include some of the liquid for a slightly creamier consistency. Now, for the star of the dressing: mayonnaise. Following Ryu Soo Young’s tip, add mayonnaise in about three ‘Choco Pie-sized’ swirls, which is roughly 3 tablespoons. Feel free to adjust this amount to your preference.
Step 3
Next, add 2 tablespoons of vinegar for a touch of tanginess. Apple cider vinegar or white wine vinegar will add a lovely depth of flavor. The vinegar balances the sweetness of the corn and creates a harmonious taste.
Step 4
Now, stir in 1 tablespoon of sugar to enhance the sweetness. You can adjust the sugar based on the corn’s natural sweetness and your personal taste. Aim for a balanced sweetness rather than overly sugary.
Step 5
Finally, add 1/2 teaspoon of salt to season the salad and bring out all the flavors. A pinch of black pepper will also add a subtle warmth and complexity. Don’t skip the salt, as it truly elevates the ingredients.
Step 6
Using a spatula or spoon, gently mix all the ingredients together until well combined. Be careful not to mash the corn kernels. Your delicious corn salad is now ready! It’s great to serve immediately, but chilling it in the refrigerator for a bit will enhance its refreshing taste. This salad is also versatile – use it as a filling for sandwiches or as a topping for crackers to make quick canapés.
