Hearty and Nutritious Beef Curry Rice for the Whole Family

Main Ingredients- 300g beef for stewing
- 1 packet curry roux (store-bought)
- 1/2 medium carrot
- 1 medium potato
- 1 medium onion
Cooking Instructions
Step 1
First, peel the onion and dice it into bite-sized pieces, about 1.5 cm cubes. If you cut them too small, they might become mushy when cooked, so a moderate size is best.
Step 2
Dice the carrot into similar-sized cubes as the onion. A helpful tip is that if the carrot pieces are too large, they will take longer to cook. So, cutting them into appropriate sizes is important for even cooking with other ingredients.
Step 3
Peel the potato thoroughly, then dice it into cubes roughly the same size as the onion and carrot. Be mindful not to cut the potatoes too small, as they can break down when cooked.
Step 4
Gather all the prepared onion, carrot, and potato into one bowl. This makes it easier to add them to the pot when cooking.
Step 5
Prepare 300g of beef for stewing, which will add a wonderful flavor to the curry. Using a cut with a moderate amount of fat will result in a more tender and delicious curry.
Step 6
Heat 1 tablespoon of cooking oil in a pot over medium-low heat. Add the prepared beef and stir frequently with a spatula to prevent it from sticking to the bottom, cooking just until the outside turns opaque (about 2-3 minutes).
Step 7
Once the beef is about 60% cooked (its exterior has turned white), add all the diced onion, carrot, and potato to the pot. Stir-fry everything together for about 3-4 minutes until the vegetables are coated with oil and slightly softened.
Step 8
When the vegetables start to look slightly translucent (about 80% cooked), add enough water to just cover the ingredients. Turn the heat up to high and bring to a boil.
Step 9
As the liquid boils, scum will rise to the surface from the beef and vegetables. Skim off this foam with a spoon for a cleaner and more delicious curry. Make sure to remove it thoroughly.
Step 10
Take 1 packet of store-bought curry roux and mix it with 2/3 cup (approx. 130ml) of water in a separate bowl, whisking until smooth and lump-free. Pour the dissolved curry mixture into the pot. Reduce the heat to medium-low and stir constantly to prevent sticking, simmering until the curry sauce thickens to your desired consistency.
Step 11
Continue to simmer for about 5 to 10 minutes, or until the curry sauce has thickened slightly. Your delicious Beef Curry Rice is now ready! Serve generously over warm rice. This dish is perfect as a satisfying meal for kids and a delightful dinner option for adults.
