Here’s a recipe for sausage curry fried rice that kids absolutely love. It’s a simple yet delicious dish.
Main Ingredients- 2 bowls of freshly cooked, warm rice
- 1 sausage, finely chopped (homemade or regular)
- 1/2 red bell pepper, finely diced
- 1/2 onion, finely diced
- 1 shiitake mushroom, finely diced
- 1/4 carrot, finely diced
- 2 fresh eggs
- 1 Tbsp milk (for tenderness)
- 1 pinch of salt
- 1.5 Tbsp cooking oil
Seasoning & Spices- 1.5 Tbsp curry powder
- 2/3 Tbsp soup soy sauce (guk-ganjang) for umami
- A little black sesame seeds (for garnish)

Cooking Instructions
Step 1
First, thoroughly wash and prepare all the vegetables: red bell pepper, onion, shiitake mushroom, and carrot. Then, finely dice them into small, uniform pieces that are easy for children to eat. Dicing the vegetables finely will help them blend well with the rice and improve the texture.
Step 2
In a bowl, whisk the eggs with 1 Tbsp of milk and a pinch of salt until smooth. Lightly coat a preheated pan over low heat with a little cooking oil using a paper towel. Pour in the beaten egg and cook until it just starts to set. Gently scramble the egg with chopsticks or a spatula to create soft scrambled eggs, then set aside on a plate. These scrambled eggs will add texture and visual appeal to the fried rice later.
Step 3
Now, add the remaining 1.5 Tbsp of cooking oil to the pan and preheat over medium-high heat. Add all the diced vegetables and sausage to the pan. Stir-fry until the moisture from the ingredients evaporates and they become slightly firm and chewy. This step helps to bring out the natural sweetness of the vegetables, deepening the flavor of the fried rice.
Step 4
Once the vegetables and sausage are nicely sautéed, add the prepared scrambled eggs and gently mix them in. Next, sprinkle the curry powder evenly over the mixture. Stir-fry while stirring to prevent burning, adjusting the heat as needed. Finally, add a sprinkle of black sesame seeds for a nutty flavor and a pinch of black pepper to enhance the aroma. Season with 2/3 Tbsp of soup soy sauce. It’s best to add the soup soy sauce gradually, tasting as you go, to achieve the desired saltiness, as adding too much at once can make the dish overly salty.
Step 5
Lastly, add the 2 bowls of warm, fluffy rice to the pan. To ensure the rice doesn’t clump and mixes well with the ingredients without breaking the grains, it’s helpful to use two spatulas. Press down gently with the spatulas as you stir-fry, ensuring the rice is evenly coated with the delicious ingredients and seasonings.
