This spinach, mushroom, and tuna fried rice is incredibly delicious with the rich, buttery aroma, making it a dish that even picky eaters will love, despite the abundance of vegetables. It’s a simple yet nutritious meal perfect for busy days or a delightful weekend treat for the whole family.
Main Ingredients- 1.5 bowls of cooked rice (approx. 310g)
- 150g fresh spinach (about 1/2 bunch)
- 1 can of tuna, drained (100g)
- 5 button mushrooms
- 1/4 onion
- 2 Tbsp butter
- 2 cloves garlic
- 1/5 tsp black pepper
Special Miso Seasoning- 1 Tbsp miso paste
- 1 Tbsp sesame oil
- 1 tsp minced garlic
- 1/2 Tbsp soy sauce
- 1 tsp oligosaccharide
- 1 Tbsp miso paste

Cooking Instructions
Step 1
First, trim the root ends of the fresh spinach and wash it thoroughly. Chop the spinach into approximately 2cm lengths. Thinly slice the button mushrooms. Finely mince the onion. Slice the garlic cloves thinly.
Step 2
Drain the oil completely from the canned tuna using a sieve. This step is important to prevent the fried rice from becoming greasy and to maintain a clean flavor.

Prepare the special miso seasoning by combining 1 Tbsp miso paste, 1 Tbsp sesame oil, 1 tsp minced garlic, 1/2 Tbsp soy sauce, and 1 tsp oligosaccharide in a small bowl. Mix well with a spoon until all ingredients are evenly combined. This forms the base for your delicious fried rice.
Step 4
Now, let’s add depth of flavor to the fried rice. Heat a pan over medium heat and add 2 Tbsp of butter. Once the butter has melted, add the sliced garlic and minced onion. Sauté for about 1 minute until the aromatics become fragrant and the onion turns translucent, being careful not to burn them. This process will infuse the rice with a wonderfully rich, buttery, and savory flavor.
Step 5
Add the thinly sliced button mushrooms to the pan and sauté for another minute until they are lightly cooked and have released some of their aroma. Then, add the cooked rice to the pan. Use a spatula to break up any clumps of rice and stir-fry until the rice is evenly mixed with the other ingredients.

Once the rice is lightly stir-fried, add the prepared spinach and the special miso seasoning. Reduce the heat to medium and continue to stir-fry for about 2-3 minutes, allowing the ingredients to meld together. The key is to cook until the spinach wilts and the seasoning evenly coats the rice grains.
Step 7
Turn off the heat once all ingredients are well-combined and cooked. Finally, add the drained tuna and a pinch of black pepper. Gently mix everything together, being careful not to mash the ingredients. Your delicious spinach, mushroom, and tuna fried rice is now ready! Serve warm for the best taste.
