Kim Ramyeon: A Unique Instant Noodle Dish
Making Baek Jong-won’s Kim Ramyeon, Inspired by Kim Heechul
Try making Baek Jong-won’s Kim Ramyeon, a dish that gained popularity from the TV show ‘Taste of Discovery’! This novel ramen recipe combines the savory flavor of seaweed with the satisfying chewiness of instant noodles, creating a surprisingly delicious and unique dish. Following in the footsteps of seaweed chips and kimchi stew, this Kim Ramyeon is sure to be a hit. Inspired by Baek Jong-won’s ingenuity in utilizing Haenam’s specialty seaweed for diverse culinary creations, let’s recreate this delightful ramen that the whole family can enjoy.
Ingredients- 1 pack instant noodles
- 1/2 scallion, finely chopped
- 2 sheets of dried seaweed (gim)
- 1 Tbsp sesame seeds
- 2 Tbsp perilla oil (deulgireum)
- 1 Tbsp chopped Korean chili pepper (optional)
- 100ml water
- 1 tsp sugar
- 1 Tbsp soy sauce
Cooking Instructions
Step 1
First, prepare the aromatics and toppings. Finely chop the scallion and Korean chili pepper. In a dry pan, lightly toast the dried seaweed sheets until fragrant. Once cooled slightly, place the toasted seaweed in a plastic bag and crumble it by hand or with a rolling pin to create seaweed flakes. If serving to children, it’s advisable to omit the Korean chili pepper. While toasted gim (seaweed) is recommended, most dried seaweed varieties (excluding seasoned ones) will work well.
Step 2
Now, let’s make the flavorful sauce for your Kim Ramyeon. In a small saucepan, combine 100ml of water with the ramen soup base packet. Add 1 tsp of sugar and 1 Tbsp of soy sauce. Bring this mixture to a boil, then immediately reduce the heat and let it cool completely. This concentrated sauce adds a deep umami flavor. (Tip: Using only 100ml of water creates a richer sauce. You may adjust the water amount slightly to your preference if you find it too strong.) While some prefer to rinse the ramen noodles to remove excess oil for a healthier dish, this recipe incorporates the soup base directly for maximum flavor.
Step 3
Cook the instant noodles according to the package directions in boiling water. Once cooked, drain the noodles and rinse them briefly under cold running water to remove excess starch and cool them down. Drain thoroughly. (Tip: Rinsing the noodles can result in a cleaner, lighter taste.) Place the prepared noodles in a serving bowl. While many enjoy ramen with broth, this dry-mixed style of Kim Ramyeon offers a delightful change of pace.
Step 4
Finally, assemble your Kim Ramyeon! Add the chilled sauce over the drained noodles in the bowl. Drizzle generously with 2 Tbsp of perilla oil. Top with the crumbled seaweed flakes, sesame seeds, chopped scallions, and Korean chili peppers. Give everything a good mix, and your unique Baek Jong-won’s Kim Ramyeon is ready to be enjoyed!
