Main Ingredients

  • 1 squid, cleaned
  • 1 paper cup of aged kimchi, seeded
  • 2 servings of cooked brown rice
  • 2 sheets of seaweed for gimbap
  • 2 Tbsp perilla oil

Cooking Instructions

Step 1

First, blanch the cleaned squid in boiling water for about 1-2 minutes until it’s just cooked through; overcooking can make it tough. Drain the blanched squid, let it cool slightly, and then cut it into bite-sized pieces.

Step 2

Rinse the aged kimchi under running water to reduce its sourness, then squeeze out excess water thoroughly with your hands. In a bowl, combine the kimchi with 1 Tbsp of perilla oil and mix well by hand. The perilla oil adds a wonderful nutty aroma and depth of flavor.

Step 3

Lightly brush one side of the gimbap seaweed sheet with perilla oil. This helps the rice stick better and adds a subtle nutty taste. Then, spread the cooked brown rice evenly over the oiled side of the seaweed, being careful not to mash the grains. Avoid spreading the rice too thickly, as it might cause the roll to burst.

Step 4

Arrange the bite-sized squid pieces and the perilla oil-seasoned kimchi over the spread brown rice. Carefully roll the gimbap tightly, then slice it into serving pieces. Your delicious Squid Brown Rice Gimbap is ready! You can also sprinkle sesame seeds on top for extra flavor.
