Cooking Instructions

Step 1

First, peel the potatoes thoroughly. While Chef Kim Soo-mi sometimes cuts them into rustic, larger pieces for a traditional feel, we recommend dicing them into bite-sized cubes (about 2-3 cm) for easier eating.

Step 2

Slice the green and red chili peppers diagonally to a size similar to the potato cubes. They’ll add a touch of heat and vibrant color.

Step 3

Place the diced potatoes in a pot or deep pan. Add 200-300ml of water, just enough to mostly cover the potatoes. Don’t worry too much about the exact amount right now.

We’re not overly concerned with the initial water level because if there’s too much liquid left after the potatoes are cooked, we can simply drain it off. So, proceed with ease.

Step 5

While the potatoes are cooking, add the soy sauce. A good starting point is about 1 tablespoon per potato, but it’s crucial not to make it too salty. It’s better to add more later if needed, rather than starting with too much.

Step 6

Add 2 teaspoons of sugar to enhance the potatoes’ flavor. You can adjust the sweetness to your preference.

Step 7

Drizzle 1 tablespoon of olive oil into the pan. This adds richness to the dish. You can substitute with other cooking oils if preferred.

Bring the mixture to a boil over medium-high heat. Cook until the potatoes are tender, stirring gently occasionally to ensure the sauce coats them evenly.

To check if the potatoes are cooked, gently pierce one with a chopstick or fork. If it goes in smoothly, they’re ready for the next step. If there’s still a lot of liquid in the pan, carefully pour off the excess water, being careful not to break the potatoes.

It’s best to leave about one-third to two-thirds of the liquid remaining in the pan. This concentrated liquid will form a delicious glaze as it reduces further.

Taste the potatoes. If they need more saltiness, add a little more soy sauce to adjust the flavor. This is why we were conservative with the initial soy sauce addition.

Add the sliced green and red chili peppers to the pan. They will add a pleasant spicy kick and beautiful color.

Finally, stir in 2 teaspoons of honey. This adds a lovely sheen and a touch of sweetness. If you don’t have honey, corn syrup or other liquid sweeteners can be used as a substitute.
