Clever Ways to Use Aged Kimchi: Making Kimchi and Flounder Sushi
I made a simple and delicious Aged Kimchi and Flounder dish using leftover delivery flounder sashimi and aged kimchi. It’s a fantastic way to repurpose ingredients for a quick and flavorful meal.
Sushi Ingredients- 1/4 head of aged kimchi (mukimchi)
- 2 bowls of cooked rice
- Appropriate amount of flounder sashimi
- Appropriate amount of wasabi paste (or prepared mustard)
Sushi Vinegar Seasoning (Sushi-zu)- 2 Tbsp rice vinegar
- 1 Tbsp sugar
- 2 pinches of salt
- 2 Tbsp rice vinegar

Cooking Instructions
Step 1
Rinse the aged kimchi under running water to remove excess seasoning, then gently squeeze out any excess water. Cut the kimchi into bite-sized pieces. This step preserves the delicious tartness while reducing any harsh sourness.
Step 2
In a small bowl, combine the ingredients for the sushi vinegar seasoning: rice vinegar, sugar, and salt. Stir well until the sugar and salt are completely dissolved. This simple mixture is key to perfectly seasoned sushi rice.
Step 3
Prepare the flounder sashimi that you have leftover from your delivery order. If the slices are too thick for sushi, you can gently slice them into thinner pieces for easier handling.

Pour the prepared sushi vinegar mixture evenly over the warm cooked rice. Gently fold the rice using a spatula or rice paddle, being careful not to mash the grains. This technique ensures fluffy, well-seasoned sushi rice. Allow the rice to cool slightly before mixing to prevent it from becoming mushy.

Take a portion of the seasoned sushi rice and shape it into small, hand-pressed sushi mounds. Place a small dab of wasabi paste onto the top of each sushi mound. Adjust the amount of wasabi to your personal preference.

Carefully place a piece of the prepared flounder sashimi on top of the wasabi on each sushi mound. Gently press down to help the fish adhere to the rice.
