Ingredients

  • 1 bowl of warm rice
  • 3 Tbsp well-fermented kimchi (finely chopped)
  • 1/3 stalk green onion (finely chopped)
  • 1/3 onion (finely chopped)
  • 1 egg
  • 1 Tbsp butter
  • A little seasoned seaweed (crumbled)
  • 1 Tbsp canned corn
  • 1 Tbsp ketchup
  • 1 Tbsp oyster sauce
  • 1 Tbsp sugar
  • 1 Tbsp red pepper powder (gochugaru)
  • 1 Tbsp perilla oil
  • 1 Tbsp sesame seeds
  • 1 Tbsp minced garlic
  • Spam or ham, to taste (cut into bite-sized pieces)

First, prepare all the ingredients that will bring out the best flavor in your kimchi fried rice. It’s especially important to use ripe, not overly sour, kimchi for the best taste. Finely chop the kimchi into manageable pieces.

Heat a pan over medium-low heat. Add 1 Tbsp of butter and 1 Tbsp of minced garlic. Sauté until fragrant, being careful not to burn the garlic. Then, add 1 Tbsp of canned corn and stir-fry together. This creates a delicious base where the butter and corn flavors meld beautifully.

Now, add the cut Spam (or ham) to the pan and cook until golden brown. Once the Spam is cooked, add the finely chopped kimchi. To enhance the flavor, drizzle in 1 Tbsp of perilla oil. Stir-fry until the kimchi softens and its color deepens.

Once the kimchi is sautéed, add the chopped onion and green onion to the pan. Cook until the vegetables become translucent and softened, adding a lovely aroma.
