Tired of the same old kimchi fried rice? Add a unique touch by wrapping it inside a soft, fluffy rolled omelet! It’s savory and convenient to eat bite-sized pieces, making it a popular choice for children’s meals. This is a practical recipe that uses up leftover ingredients for a hearty and delicious meal.
Main Ingredients
- Well-fermented Kimchi: 2/3 cup (approx. 150g)
- Onion: 1/4 medium (approx. 30g)
- Spam: 65g (1/2 can)
- Cooked Rice: 1.5 cups (approx. 300g)
Cooking Instructions
Step 1
First, lightly rinse the kimchi under running water, squeeze out excess moisture, and finely chop it into small pieces, about 0.5cm wide, suitable for scooping with a spoon. If your kimchi is very sour, you can add a little more sugar.
Step 2
To remove excess grease, briefly soak the Spam in warm water for 1-2 minutes. Pat it dry with paper towels, then dice it into small cubes, slightly smaller than a grain of rice. Finely chop the onion as well.
Step 3
Heat about 1/2 Tbsp of cooking oil in a pan over medium heat. Add the chopped onion and sauté until translucent. Once fragrant, add the chopped kimchi and 1/2 Tbsp of sugar. Stir-fry until the kimchi softens and becomes glossy. Finally, add the diced Spam and cook until it turns golden brown.
Step 4
Once the kimchi and Spam are well stir-fried, add the 1.5 cups of warm cooked rice. Use a spatula to gently break up any clumps of rice and mix everything thoroughly until the kimchi seasoning is evenly distributed, creating delicious kimchi fried rice.
Step 5
In a large bowl, crack 4 eggs. Add a pinch of black pepper and 1-2 pinches of sugar. Whisk gently to break up the egg whites. Heat a lightly oiled pan over low heat. Pour half of the beaten egg mixture (from 2 eggs) into the pan and cook slowly until the surface is mostly set but still moist. It’s important not to overcook it at this stage.
Step 6
Once the egg is slightly cooked, carefully place a line of the prepared kimchi fried rice along the width of the pan onto the egg. Gently press the fried rice with the back of a spoon or spatula to shape it. Starting from one edge, carefully roll the egg over the kimchi fried rice. Continue rolling, adding the remaining egg mixture as needed to connect the layers, until you reach the other end, forming a rolled omelet shape.
Step 7
Repeat the same process with the remaining 4 eggs to make a second rolled omelet filled with kimchi fried rice. Once both rolled omelets are cooked, let them cool slightly, then slice them into bite-sized pieces for a special dish that both children and adults will enjoy! Serve beautifully plated.
