Main Ingredients

  • Pork belly
  • Well-fermented napa cabbage kimchi (ripe kimchi)
  • 1 bunch King oyster mushrooms
  • 1 small bunch fresh chives
  • Sheets of Gim (seaweed, for rolling)

Special Seasoning Sauce

  • 1 Tbsp sugar
  • 2 Tbsp minced green onion (scallion)
  • 1 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 1 Tbsp soy sauce
  • 1 Tbsp plum extract (maesil-cheong)
  • 1 Tbsp sesame oil
  • 2 Tbsp gochujang (Korean chili paste)
  • Pinch of black pepper (to taste)

Cooking Instructions

Step 1

Begin by rinsing the fresh chives and king oyster mushrooms under running water. Trim the woody ends off the mushrooms. Cut both the chives and mushrooms into lengths of about 4-5 cm (approximately 1.5-2 inches).

Step 1

Step 2

Now, let’s prepare the flavorful seasoning sauce that will bring everything together. In a bowl, combine 1 Tbsp sugar, 2 Tbsp minced green onion, 1 Tbsp minced garlic, 1/2 Tbsp minced ginger, 1 Tbsp soy sauce, 1 Tbsp plum extract, 1 Tbsp sesame oil, 2 Tbsp gochujang, and a pinch of black pepper. Mix well until all ingredients are evenly incorporated.

Step 2

Step 3

Lay out the pork belly slices on a clean work surface or cutting board, slightly overlapping them if necessary to create a larger surface area. Generously spread the prepared seasoning sauce over the pork belly. Place the kimchi on top of the seasoned pork belly, leaving a small border (about 1 cm or a little less than 1/2 inch) along one edge to help seal the roll.

Step 3

Step 4

If you’re concerned about the rolls coming apart, here’s a simple trick: secure the rolls by inserting wooden skewers through them after rolling. This will help maintain their shape during cooking. (Remember to remove skewers before serving.)

Step 4

Step 5

Heat a frying pan over medium heat with a little oil. Carefully place the rolled pork belly seam-side down in the hot pan. Sear the seam first to help seal the roll, then gently turn and cook the other sides until lightly golden brown all over. Avoid overcooking at this stage; we’re just looking for a light sear.

Step 5

Step 6

Your Kimchi Pork Belly Rolls are almost ready! Transfer the lightly seared rolls to a baking sheet. Place them in a preheated oven at 180°C (350°F) and bake for about 10 minutes. This will finish cooking the pork belly and meld the flavors beautifully. Once done, let them cool slightly, slice, and serve warm. Enjoy your delicious creation!
