  • Well-fermented kimchi, 200g
  • Broth (anchovy, kelp, etc.), 4 cups
  • Tteokbokki rice cakes (garae-tteok or similar), 1 handful
  • Sliced cheese, 2 slices
  • Egg, 1

Prepare the pork cutlets. You can either fry them homemade until golden and crispy, or use pre-cooked ones. If frying, ensure the oil is at the right temperature for a perfectly cooked, non-soggy cutlet.

In a pot, melt a small amount of butter (for added flavor) and sauté the chopped kimchi. Cook the kimchi until it becomes translucent and slightly softened. Stir-frying the kimchi well is key to mellowing its sourness and deepening the broth’s flavor. Sauté for at least 5 minutes.
