King Oyster Mushroom and Egg Soy Braise: A Perfect Side Dish
A Delicious and Simple Side Dish: King Oyster Mushroom and Egg Soy Braise
This King Oyster Mushroom and Egg Soy Braise is a versatile side dish that stays delicious even after being stored in the refrigerator. The chewy texture of the king oyster mushrooms combined with the tender boiled eggs, all simmered in a savory soy sauce-based broth, makes it an irresistible rice accompaniment. It’s also easy to make, so it’s a great addition to your regular side dish rotation.
Main Ingredients- 6 eggs
- 200g mini king oyster mushrooms
Aromatics & Other Ingredients- 3 cloves garlic, thinly sliced
- 0.1 tsp ginger powder (or 1/4 tsp minced fresh ginger)
- 3 cloves garlic, thinly sliced
- 0.1 tsp ginger powder (or 1/4 tsp minced fresh ginger)
Cooking Instructions
Step 1
To achieve perfectly tender boiled eggs, start by preparing 6 eggs. For easier peeling, add 1/2 tsp of coarse salt and 1 tsp of vinegar to the boiling water. Place the eggs in water that completely covers them and boil over medium heat for about 10-12 minutes. Once boiled, immediately transfer the eggs to cold water to cool them down; this helps in easily removing the shells.
Step 2
Carefully peel the cooled eggs. Smooth, well-peeled eggs will make the finished dish look more appealing.
Step 3
Wash the king oyster mushrooms under running water and pat them dry. Trim off the tough ends, then cut the stems into 2-3 pieces or into bite-sized chunks. If using mini king oyster mushrooms, you can leave them whole or halve them. These prepared eggs and mushrooms will be the stars of our braise.
Step 4
Now, let’s make the delicious braising liquid. In a pot, combine 1 cup of water, 6 Tbsp soy sauce, 2 Tbsp cooking wine, 1 Tbsp corn syrup, and 0.5 Tbsp sugar. Stir well to combine. Add the thinly sliced garlic cloves and 0.1 tsp of ginger powder to enhance the flavor. (Optional: If you enjoy a bit of spice, you can add 1-2 dried chili peppers, though they are not listed in the main ingredients. Feel free to add them according to your preference.) Bring the mixture to a boil over medium heat, then reduce to low heat and let it simmer gently.
Step 5
Once the braising liquid is simmering, add the prepared king oyster mushrooms and boiled eggs to the pot. At first, the liquid might seem shallow, but the mushrooms will release their moisture, naturally increasing the volume of the broth. Cover the pot or leave it uncovered, and let it simmer over medium-low heat, allowing the flavors to meld and the ingredients to absorb the sauce evenly.
Step 6
Continue to braise for about 10-15 minutes, or until the eggs and mushrooms are thoroughly coated and flavored with the delicious sauce. Stir occasionally to ensure even cooking and seasoning. The dish is ready when the liquid has reduced and the ingredients look glossy. (Unfortunately, the final photo is missing, but imagine the delicious aroma and appearance!)
Step 7
The King Oyster Mushroom and Egg Soy Braise tastes best after it has cooled slightly and the flavors have had more time to meld. It’s wonderful served as a side dish or even spooned over rice for a simple and satisfying meal.
