Step 1
Let’s start by preparing the ground beef mixture for our cutlets. In a bowl, combine the 200g of ground beef with all the ‘Beef Seasoning’ ingredients: 1/2 Tbsp minced garlic, 1 Tbsp chopped scallion, 2 Tbsp breadcrumbs, a pinch of salt, and a pinch of black pepper. Knead the mixture with your hands until it becomes sticky and cohesive. This ensures the mixture holds its shape well.
Step 2
Next, prepare the kiwis. You can use them whole or cut them in half, as the beef coating will increase their size. Divide the ground beef mixture into portions, matching the number of kiwi halves you’re using. Shape each portion around a kiwi half, forming a neat ball. The sticky beef mixture should encase the kiwi easily. For the coating, mix the parsley flakes into the breadcrumbs. Here’s a helpful tip: Lightly mist the breadcrumbs with water about 3 times using a spray bottle. This slightly moistens the breadcrumbs, preventing the coating from burning too quickly in the hot oil and contributing to a crispier finish.
