Ingredients

  • 600g Konjac
  • 3 cups Mixed Grains (Black Rice + Brown Rice + White Rice, mixed to your preference)
  • 1 Tbsp Vinegar

Cooking Instructions

First, prepare 600g of konjac. It’s important to remove its characteristic odor.

To effectively get rid of the konjac smell, soak it in a vinegar solution for over an hour. While boiling is an option, if you have time, soaking it in plain water with 1 tablespoon of vinegar for about 1 hour and 10 minutes is also recommended. (I used this method.)

Prepare a total of 3 cups of rice by mixing black rice, brown rice, and white rice according to your preference. This allows you to enjoy the harmonious flavors of various grains.

Since 30 minutes of soaking is sufficient for the rice, it’s best to start soaking it just before you plan to cook the rice. Soaking the rice for too long beforehand can make the rice mushy.

After taking the konjac out of the vinegar solution, rinse it thoroughly under running water and drain any excess moisture.

Place the drained konjac into a blender and grind it finely. If you are using pre-portioned ‘Alal-i Konjac’ (grain-like konjac), you can use it directly or just soak it in the vinegar water. This is a convenient option.

Add the finely ground konjac to the soaked rice. When I used 3 cups of rice with 3 cups of water, the water was too much. Since konjac adds moisture, it’s best to adjust the water to about 2.3 to 2.5 cups.

Before cooking the rice, gently stir with a spatula to ensure the konjac is well mixed with the rice. This step helps prevent the konjac from clumping and ensures it integrates evenly with the rice grains.

After cooking for about 1 hour, your konjac rice will be ready. Initially, the konjac might appear to float on top of the rice, but once you gently mix it, it will look almost indistinguishable from regular rice. Based on taste, the consistency was slightly soupy due to a bit too much water, but the texture was softer, almost like mixed with glutinous rice, and the taste was similar to regular rice. Enjoy this konjac rice that balances health and deliciousness!
