  • 250g Korean beef sirloin
  • 1/4 onion
  • 1 bell pepper
  • 1 red chili pepper
  • 1 king oyster mushroom

Seasoning & Others

  • 2 pinches salt
  • 1 Tbsp olive oil
  • 1 Tbsp oyster sauce

Cooking Instructions

First, thoroughly pat dry the blood from the Korean beef sirloin using paper towels. Sprinkle 2 pinches of salt over the sirloin for seasoning, then coat it with 1 Tbsp of olive oil. Refrigerate for 2 hours to marinate. This resting period will make the meat even more tender.

Heat a generous amount of olive oil in a pan. Start by sautéing the sliced onion until fragrant and softened. Once the onions become translucent, add the prepared king oyster mushrooms and stir-fry quickly over high heat. It’s important to cook until the mushrooms release their moisture.

Next, add the sliced red chili pepper and bell pepper to the pan. Stir-fry quickly over high heat to retain the crisp texture of the vegetables. (You can substitute red chili pepper with red bell pepper. If using bell pepper, remove the seeds and cut into large pieces.) Transfer the stir-fried vegetables to a separate bowl and let them cool slightly.

Now, cut the Korean beef sirloin, which has been refrigerated, into large pieces. Heat the pan to very high heat, then add the sirloin and sear quickly on all sides to brown the exterior. Cooking over high heat for a short time prevents the juices from escaping, keeping the steak moist.

Once the sirloin is seared, remove it from the heat and cut it into bite-sized pieces using scissors. Avoid cutting them too small, as this can make the texture dry; slightly larger than bite-sized pieces are ideal.

Add the previously stir-fried vegetables back into the pan with the cut sirloin. Stir everything together for a moment, then finally add 1 Tbsp of oyster sauce. Stir-fry quickly to coat everything with the sauce, adding gloss and flavor. Serve immediately while warm!
