Introducing Namul Bibimbap, a traditional dish enjoyed on Korea’s Lunar New Year (Jeongwol Daeboreum). This vibrant bowl is packed with a variety of seasoned vegetables like gosari (fernbrake), doraji (bellflower root),숙주 (mung bean sprouts), hobak (pumpkin), siraegi (dried cabbage), chinamul (Korean mugwort), and gatnamul (mustard greens), offering a wealth of nutrients and flavors. It’s best enjoyed mixed with a savory dallae (Korean wild chive) soy sauce dressing, though a touch of gochujang (red chili paste) can be added to suit your preference. For optimal health benefits, we recommend enjoying it simply with the namul and dressing, skipping the fried egg. This dish is excellent for boosting immunity, enhancing stamina, and is also a great option for a healthy diet.

Cooking Instructions
Step 1
Prepare your selection of seasoned vegetables (namul). Here we showcase seasoned bellflower root, Korean mugwort, and mustard greens. These vegetables are typically pre-cooked to a tender consistency.
Step 2
Next, include seasoned pumpkin, fernbrake, and dried cabbage. Combining a variety of namul creates a rich and complex flavor profile.
Step 3
Prepare a bowl of multi-grain rice. Compared to plain white rice, multi-grain rice is richer in nutrients, making it excellent for boosting immunity, enhancing stamina, and supporting a healthy diet.
Step 4
For added protein, prepare some finely minced beef. Also, include mung bean sprouts for a delightful crunchy texture. You can lightly blanch or sauté the mung bean sprouts.
Step 5
Enhance your bibimbap with fresh greens like spring greens (bomdong), lettuce, or fresh mustard greens. Since the namul are already cooked and tender, the crispness of fresh vegetables adds a wonderful contrast in texture. Spring greens, with their sweet and nutty flavor, pair exceptionally well with namul bibimbap.
Step 6
In a bowl, place the multi-grain rice. Arrange the various prepared namul around the rice in a colorful pattern. Top the center with the minced beef and gochujang (optional). Drizzle with the dallae soy sauce dressing for an extra layer of savory flavor. Drizzle with sesame oil to taste, as some of the namul may already contain it.
