LA Galbi- 1kg LA Galbi (short ribs)
Marinade Ingredients- 16 Tbsp soy sauce
- 5 Tbsp cooking wine (mirin or rice wine)
- Pinch of black pepper
- 6 Tbsp sugar
- 2 Tbsp ginger syrup
- 1/2 onion
- 1 packet apple juice (approx. 100ml)
- 8 cloves garlic
- 16 Tbsp soy sauce
- 5 Tbsp cooking wine (mirin or rice wine)
- Pinch of black pepper
- 6 Tbsp sugar
- 2 Tbsp ginger syrup
- 1/2 onion
- 1 packet apple juice (approx. 100ml)
- 8 cloves garlic
Cooking Instructions
Step 1
Rinse the 1kg of LA Galbi under cold running water and soak them for 2 to 3 hours to remove any excess blood. Change the water 3 to 4 times during this process for a cleaner result. (Optional Tip) For extra tenderness and to help remove any remaining odors, you can add 1 tablespoon of sugar to the soaking water. This is a simple trick to enhance the quality of the meat.

Step 2
Prepare all the marinade ingredients. Instead of juicing an apple, you can conveniently use store-bought apple juice. Ginger syrup is also a great time-saver. Finely grate or blend half an onion; this, along with the apple juice, acts as a natural tenderizer for the meat. Adjust the sugar quantity to your preference for sweetness. (Tip: Pear juice or pureed pear can also be used for tenderizing.)

Step 3
After soaking, rinse the LA Galbi gently under cold running water. Pay close attention to the bones and ensure any bone fragments or debris are thoroughly washed away.

Step 4
Pat the rinsed LA Galbi dry with paper towels. Place the dried ribs in the prepared marinade and mix well to ensure each piece is evenly coated. For the best flavor penetration, cover the bowl tightly with plastic wrap and refrigerate for at least 3 hours, or preferably overnight.

Step 5
Remove the marinated LA Galbi from the refrigerator. Heat a frying pan over medium-high heat. Place the ribs in the pan and spoon some of the marinade over them as they cook. For a crispier texture, as my husband prefers, cook them a bit longer, allowing the marinade to caramelize slightly, similar to a braise. Step 6
