Main Ingredients- 3kg Beef Short Ribs (LA style cut)
- A pinch of sesame seeds
- 200ml Water
LA Galbi Marinade- 1 Pear (peeled and cored)
- 1 Apple (peeled and cored)
- 1/3 Kiwi (peeled)
- 400ml Water
- 250ml Soy Sauce
- 75ml Sugar (adjust to taste)
- 180ml Mirin (or cooking wine)
- 135ml Sesame Oil
- 3 Tbsp Minced Garlic
- 3 Tbsp Minced Ginger (or 1/2 tsp ground ginger)
- 3 Twists Black Pepper (approx. 1/4 tsp)
- 1 Pear (peeled and cored)
- 1 Apple (peeled and cored)
- 1/3 Kiwi (peeled)
- 400ml Water
- 250ml Soy Sauce
- 75ml Sugar (adjust to taste)
- 180ml Mirin (or cooking wine)
- 135ml Sesame Oil
- 3 Tbsp Minced Garlic
- 3 Tbsp Minced Ginger (or 1/2 tsp ground ginger)
- 3 Twists Black Pepper (approx. 1/4 tsp)
Cooking Instructions
Step 1
In a blender, combine the peeled and cored pear, peeled and cored apple, peeled kiwi, and 400ml of water. Blend until smooth. Strain the mixture through a fine-mesh sieve or cheesecloth, pressing gently to extract all the juice. This fruit juice is key to tenderizing the ribs and adding a wonderful depth of flavor.
Step 2
In a bowl, combine the extracted fruit juice with all the marinade ingredients: soy sauce, sugar, mirin, sesame oil, minced garlic, minced ginger, and black pepper. Whisk everything together until the sugar is dissolved and all the ingredients are well incorporated. Ensure a homogenous mixture for even flavoring.
Step 3
Place the prepared beef short ribs in a large bowl or resealable bag. Pour the marinade over the ribs, ensuring each piece is well coated. Gently massage the marinade into the meat. For best results, marinate for at least 30 minutes at room temperature, or ideally, refrigerate for 2-3 hours or even overnight to allow the flavors to fully penetrate the meat.
Step 4
Heat a pan over medium-high heat. Arrange the marinated ribs in a single layer in the pan, making sure not to overcrowd it. Once the ribs begin to sear, add 200ml of water to the side of the pan. Bring to a boil, then reduce the heat to medium-low, cover the pan, and let the ribs simmer gently until they are tender and the sauce has reduced to a glaze. Flip the ribs occasionally to ensure even cooking.
Step 5
Once the ribs are beautifully browned and the sauce has thickened to a delicious glaze, carefully transfer the LA Galbi to a serving plate.
