  • 320g milk
  • 35g sugar
  • 1g salt
  • 4g baking powder
  • 4g baking soda
  • 80g sweetened red bean paste
  • 80g sweetened green pea paste
  • 40g raisins

In a large bowl, combine the eggs, sugar, salt, and milk. Whisk well until there are no lumps and the mixture is smooth. Ensure all ingredients are thoroughly combined.

Sift the glutinous rice flour, baking powder, and baking soda into the bowl. Whisk briskly until just combined. If the batter seems too thick to whisk easily, add a little more milk until it reaches a slightly thick pancake batter consistency.

Add the sweetened red bean paste, green pea paste, and raisins to the batter. Stir gently to distribute them evenly throughout. Don’t be shy with the fillings – they add wonderful texture and sweetness! The sweetened green pea paste is particularly delicious on its own.

You can use any baking molds you prefer, but keep in mind that baking times will vary based on their size and shape. Before pouring the batter, generously brush the inside of each mold with oil to prevent sticking. (For example, filling financier molds and a size #2 tart mold yielded a perfect batter amount.) Bake in a preheated oven at 180°C (350°F). Financier molds typically take about 20 minutes, while a size #2 tart mold may need around 30 minutes. Monitor the pies as they bake and adjust the time as needed until the tops are golden brown and slightly puffed.
