Leftover Fried Rice Kimbap
Weekend Fridge Clean-Out Kimbap: Solve Dinner with Fried Rice Kimbap!
I’ve found that kimbap is the best solution when my kids are being picky eaters, so I always make it! That’s why I always have kimbap seaweed at home… haha… Today, I made ‘Fridge Clean-Out’ Fried Rice Kimbap using up whatever I had.
Ham and Vegetable Fried Rice Ingredients- 1.5 bowls of cooked rice
- 1/4 carrot
- 1/4 zucchini
- 1/4 onion
- 50g ham
- 1/2 tsp oyster sauce
Kimchi Fried Rice Ingredients- 1/4 head of kimchi
- 1 tsp oligosaccharide
- 1/2 tsp oyster sauce
- 2 sheets of kimbap seaweed
- Braised burdock root (prepared)
- 1/4 head of kimchi
- 1 tsp oligosaccharide
- 1/2 tsp oyster sauce
- 2 sheets of kimbap seaweed
- Braised burdock root (prepared)
Cooking Instructions
Step 1
First, dice the ham into bite-sized pieces, about 1cm thick. Finely chop the carrot, zucchini, and onion into similar-sized pieces. Lightly oil a pan, add the diced ham and vegetables, and stir-fry. Then, add 1.5 bowls of cooked rice and stir-fry everything together until the rice grains are distinct and slightly toasted. This step is key for a good texture.
Step 2
To the fried rice, add 1/2 teaspoon of oyster sauce for seasoning. Finish with a drizzle of sesame oil for a nutty aroma. This completes the vegetable and ham fried rice that kids love.
Step 3
Now, let’s make the kimchi fried rice for the adults. In the pan, combine the chopped kimchi with 1/2 teaspoon of oyster sauce and 1 teaspoon of oligosaccharide. Stir-fry until the kimchi is cooked through and the sauce is well combined. Add cooked rice and stir-fry together. Finish with a touch of sesame oil for a delicious kimchi fried rice.
Step 4
We’re almost ready to roll the kimbap! For the kids’ kimbap, we’ll use the prepared braised burdock root. (Optionally, you can also prepare a thin omelet or other fillings according to your preference.)
Step 5
Place a sheet of kimbap seaweed on a bamboo rolling mat. Spread the kids’ fried rice thinly and evenly over the seaweed. Place a strip of braised burdock root along the center of the rice. Roll the kimbap tightly, pressing gently as you go. This completes the kids’ fried rice kimbap. Rolling while the rice is warm helps it stick together better.
Step 6
For the adult kimbap, adding a thin layer of omelet instead of burdock root would make it even softer and tastier. However, if you prefer, you can use braised burdock root just like for the kids’ kimbap. Similarly, spread the fried rice, add the burdock root (or omelet), and roll tightly. You can also sprinkle sesame seeds on top for extra flavor and decoration.
