Hope you had a wonderful holiday! The time seems to fly by so quickly during holidays. I used to make so many savory pancakes during traditional holidays, but nowadays, I prefer to make smaller batches and use any leftovers. Using leftover Donggeurangttaeng (Korean meat patties) and kimchi to make stir-fried rice turned out to be incredibly delicious! It’s a satisfying one-bowl meal. 🍳 Topped with a sunny-side-up egg, breaking the yolk and mixing it with the rice doubles the flavor. A perfectly fried egg with crispy edges adds a wonderful richness to the stir-fried rice. Ingredients

  • 5 Donggeurangttaeng (Korean meat patties)
  • 2/3 cup well-fermented kimchi
  • 1/4 onion
  • 1 egg
  • 15g butter
  • 1 bowl of cooked rice
  • 2 Tbsp stir-fried dried anchovies (optional)
  • Pinch of sesame seeds
  • Pinch of black pepper
  • A little cooking oil

Cooking Instructions

Thinly slice the onion and the kimchi. Finely chop the Donggeurangttaeng into bite-sized pieces. (Although only 3 are shown in the photo, a total of 5 pieces were used.)

Melt the butter in a heated pan over medium heat. Add the sliced onion and kimchi, and stir-fry until fragrant. This process mellows the sourness of the kimchi and enhances its sweetness.

Add the chopped Donggeurangttaeng to the sautéed kimchi and onion. Stir-fry together. Gently mashing the Donggeurangttaeng with your spatula as it cooks helps it meld better with the kimchi and other ingredients, enhancing the overall flavor. Once the ingredients are well-stir-fried, add 1 bowl of cooked rice. Break up the rice clumps with your spatula and stir-fry until the rice grains are separated and coated.

When the rice is nicely stir-fried and slightly crispy, sprinkle in the sesame seeds and a pinch of black pepper. Mix well to combine. Pack the stir-fried rice firmly into a rice bowl to shape it. Then, carefully invert the bowl onto a serving plate.

On one side of the plate, artfully arrange the stir-fried dried anchovies. (You can omit this if you don’t have them.) On the other side, carefully place a sunny-side-up fried egg. Be careful not to break the yolk, and aim for crispy edges for the best flavor.
