Japchae Ingredients
- Cooked glass noodles for 4 servings
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1/3 bunch spinach
- 1 medium onion
- 1/2 cup soy sauce (approx. 100ml)
- 1 Tbsp sugar
- 1 Tbsp sesame oil
- Pinch of black pepper
- Pinch of toasted sesame seeds
Cooking Instructions
Step 1
Today, we’re going to make a delicious Japchae-덮밥 using leftover Japchae. You can enjoy a wonderful meal with simple ingredients.
Step 2
First, let’s prepare the vegetables for the Japchae-덮밥. Thinly slice the red and yellow bell peppers after removing the seeds. Slice the onion similarly. Wash the spinach thoroughly, drain any excess water, and chop it into bite-sized pieces. If you’re using uncooked glass noodles, make sure to soak them in water for 15-20 minutes beforehand so they cook up tender.
Step 3
Now, let’s prepare the ingredients for stir-frying the meat. Lightly oil a pan and add the 50g of meat. Stir-fry until the outside is cooked. Be careful not to overcook, as it can become tough.
Step 4
Once the meat is partially cooked, add all the prepared vegetables (bell peppers and onion) to the pan and stir-fry them together. Stir-frying over high heat until the vegetables are slightly softened will help maintain their crisp texture.
Step 5
Now it’s time to season and stir-fry the glass noodles. If you have pre-soaked noodles, add them to the pan along with 1/2 cup of soy sauce, 1 Tbsp of sugar, and a pinch of black pepper. Stir-fry over medium heat until the seasoning is well absorbed by the noodles. Make sure to stir frequently to prevent sticking.
Step 6
Add the stir-fried vegetables and meat to the pan with the seasoned noodles. Now, mix everything together and stir-fry for just another 1-2 minutes. For a final touch of nutty aroma, drizzle in 1 Tbsp of sesame oil and mix well to finish. Add the spinach at the very end and stir briefly to avoid it becoming too mushy.
Step 7
We’re going to elevate the flavor of the Japchae-덮밥 even further! Add 1 Tbsp of oyster sauce and a pinch of black pepper to the stir-fried Japchae and quickly stir-fry once more.
