Leftover Transformation: Delicious Fried Rice Made with Donggeurang-ttaeng and Dubu Jeon

As always, holiday food tastes best right when it’s made. But why does it become so unappealing after the holiday passes? ㅠㅠㅠㅠㅠ This time, I decided to make fried rice using leftover holiday pancakes. It’s a fantastic way to give delicious leftovers a new life!

Main Ingredients
  • 5 Donggeurang-ttaeng (meatballs) (thawed if frozen)
  • 1 Dubu Jeon (tofu pancake) (thawed if frozen)
  • 1/2 Onion
  • 1/2 stalk Scallion (Green Onion)
  • 1 Egg

Cooking Instructions

Step 1

1. Thaw the frozen Donggeurang-ttaeng and Dubu Jeon by leaving them at room temperature or by using the microwave until soft. Once thawed, cut them into small, bite-sized cubes (about 1cm). This ensures a pleasant texture in the fried rice.

Step 2

2. Finely mince the onion and thinly slice the scallions. Minced onion adds depth of flavor, while sliced scallions contribute a savory aroma.

Step 3

3. Add 1.5 bowls of cooked rice to a pan. Then, add the cubed Donggeurang-ttaeng and Dubu Jeon. (Tip: If you prefer vegetables to retain a crisp texture, it’s best to add them later in the cooking process. I personally don’t like overly softened vegetables, so I tend to add them towards the end!)

Step 4

4. Once the rice and pancakes start to mix well, add the minced onion and sliced scallions to the pan and stir-fry them together. Adding the vegetables later helps keep the onion nice and crisp, enhancing the overall texture and flavor of the fried rice.

Step 5

5. Pour in 3 tablespoons of soy sauce and 1 tablespoon of perilla oil into the pan. Stir-fry vigorously until everything is evenly coated and nicely seasoned. The nutty aroma of the perilla oil will elevate the taste of your fried rice.

Step 6

6. As the fried rice nears completion, fry an egg sunny-side up until the yolk is still runny. Place the fried egg on top of the fried rice. Finally, sprinkle with sesame seeds for a beautiful presentation. Your delicious Donggeurang-ttaeng fried rice is now ready! Enjoy your meal.
