  • 1/4 Bell Pepper

  • 2 strips Bacon
  • 5 Cherry Tomatoes
  • 1/4 bundle Enoki Mushrooms
  • 1/2 tsp Minced Garlic
  • Small amount of Mozzarella Cheese
  • Small amount of Olive Oil

Cooking Instructions

First, wash and prepare all the vegetables that will go into the frittata. Finely chop the onion and bell pepper. Separate the broccoli into bite-sized florets. Halve the cherry tomatoes, and trim the base of the enoki mushrooms before roughly chopping them.

Crack the 5 eggs into a large bowl. Add a generous amount of grated Parmesan cheese. Parmesan cheese is quite salty on its own, but if you prefer a bit more salt, add a tiny pinch. Whisk everything together until well combined.

Heat a non-stick pan over medium heat and add a drizzle of olive oil. Sauté the minced garlic until fragrant, then add the prepared vegetables. Start by sautéing the onion until translucent, then add the bell pepper, broccoli, cherry tomatoes, and enoki mushrooms. Cook just until the vegetables are slightly softened, about 2-3 minutes. Overcooking will make them mushy.

Push the sautéed vegetables to one side of the pan and pour the whisked egg mixture over the other side. Once the eggs start to set around the edges, gently mix them with the vegetables. Cover the pan with a lid and cook on very low heat until the frittata is fully cooked through. It’s crucial to use very low heat to ensure the top cooks without burning the bottom. If you don’t have a lid, you can cover the pan tightly with aluminum foil.
