Main Ingredients- Leftover Yeopddukk Tteokbokki (about 1 serving)
- Plenty of shredded seaweed (gim)
- 1 Tbsp sesame oil
- A pinch of toasted sesame seeds
Optional Add-ins for Extra Flavor- 2-3 strips of bacon
- 2-3 strips of bacon
Cooking Instructions
Step 1
First, cut the leftover Yeopddukk Tteokbokki into bite-sized pieces. It’s best to chop the rice cakes into very small pieces so they blend well with the rice. To avoid scratching your pan, it’s recommended to place the tteokbokki in a glass or Tritan container and cut it with scissors. Aim for pieces roughly the size of a rice grain for optimal integration into the fried rice.
Step 2
Heat a frying pan over high heat until it’s well preheated. Once the pan is hot enough, add the chopped tteokbokki.
Step 3
Spread the tteokbokki evenly in the pan. Stir-fry for about 1-2 minutes, allowing the rice cakes to soften further and the sauce to reduce slightly, as if you’re stir-frying it again. Make sure to keep stirring constantly to prevent burning. Cook just enough so the chewy texture of the tteokbokki remains while still being able to incorporate smoothly into the fried rice.
Step 4
Briefly push the stir-frying tteokbokki to one side of the pan. Microwave the frozen rice (from the freezer) for about 3 minutes until warm. Using warm rice helps it mix better with the tteokbokki sauce and prevents the fried rice from clumping.
Step 5
Add the warmed rice to the well-stir-fried tteokbokki. Thanks to the generous amount of sauce and liquid from the tteokbokki, the rice will mix together easily without clumping. Use your spatula to vigorously stir-fry, ensuring every grain of rice is coated with the delicious sauce.
Step 6
Once the rice and tteokbokki are almost fully combined and stir-fried, reduce the heat to the lowest setting. Generously sprinkle the shredded seaweed (gim) over the mixture. The seaweed adds a savory depth and enhances the nutty aroma of the fried rice.
Step 7
Now it’s time to add that rich flavor! Drizzle in 1 tablespoon of sesame oil and sprinkle a good amount of toasted sesame seeds. These two ingredients are the secret to elevating the flavor of your Yeopddukk Bokkeumbap – don’t be shy with them! (They are truly the key to the deliciousness!)
Step 8
Finally, toss everything together with a gentle stir until well combined. The fragrant aroma of the freshly added sesame oil will tantalize your senses and whet your appetite. Enjoy the most delicious Yeopddukk Bokkeumbap made from your leftovers!
