Lettuce Salad (Geotjeori)
[2-Minute Recipe] Lettuce Geotjeori: A Perfect Remedy for Springtime Loss of Appetite!
Have you ever found yourself with a surplus of lettuce, unsure of what to do with it besides grilling meat again, and worrying it might wilt? In such times, a refreshingly tangy and savory ‘Geotjeori’ (fresh kimchi-style salad) is the ultimate appetite stimulant. It’s highly recommended as a side dish for rice or as a perfect accompaniment to grilled meats. This simple recipe will brighten your palate!
Ingredients- Lettuce 2.5 bunches (approx. 150-200g)
- Anchovy sauce 2/3 Tbsp
- Brewed soy sauce 1/2 Tbsp
- Sugar 1 Tbsp
- Vinegar 1 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Minced garlic 1/2 Tbsp
- Plum extract 1/2 ~ 1 Tbsp (adjust to taste)
- Sesame seeds (for garnish) a pinch
Cooking Instructions
Step 1
First, wash the lettuce thoroughly under running water. Make sure to clean between the leaves to remove any dirt or debris. Gently shake off excess water, or pat dry with paper towels to ensure the leaves are not too wet. This step is crucial to prevent the dressing from becoming diluted.
Step 2
Once the lettuce is clean and mostly dry, tear it into bite-sized pieces by hand. Tearing, rather than cutting, helps maintain a crispier texture. In a large bowl, combine the torn lettuce with all the dressing ingredients: anchovy sauce, soy sauce, sugar, vinegar, gochugaru, minced garlic, and plum extract. Gently toss everything together using your fingertips, being careful not to bruise the lettuce. The goal is to coat the leaves evenly without mashing them.
Step 3
Finally, sprinkle a generous pinch of sesame seeds over the salad for added aroma and flavor. Your crisp, tangy, and savory lettuce geotjeori is now ready! Enjoy this refreshing side dish with your favorite meals. It’s especially delightful with grilled meats, cutting through the richness and cleansing your palate. Enjoy your delicious meal!
