Dumpling Filling Ingredients
- Fresh Cabbage: 300g (finely minced)
- Medium Onion: 1/2 (finely minced)
- Spicy Cheongyang Pepper: 1 (seeds removed, finely minced. Adjust to your spice preference)
- Fresh Eggs: 2
- Potato Starch: 3 Tbsp (for a chewy texture)
- Savory Oyster Sauce: 1 Tbsp
- Black Pepper: A pinch (to taste)
Cooking Instructions
Step 1
First, prepare the cabbage for the filling. Wash 300g of fresh cabbage thoroughly, pat it dry, and then mince it very finely. Mincing the cabbage finely will ensure a tender and delicious filling.
Step 2
Next, peel and finely mince half of a medium onion. The natural sweetness of the onion will enhance the flavor of your dumpling filling.
Step 3
Finely mince one spicy Cheongyang pepper. Remember to remove the seeds first if you prefer less heat. You can adjust the amount or omit it if you’re not a fan of spicy food.
Step 4
In a large mixing bowl, combine the finely minced cabbage, onion, and Cheongyang pepper. Gather all your prepared vegetables in one place.
Step 5
To the vegetables in the bowl, add 2 fresh eggs, 3 tablespoons of potato starch, 1 tablespoon of oyster sauce, and a pinch of black pepper. Mix and knead everything together until well combined. Kneading helps the ingredients bind together, creating a cohesive filling.
Step 6
Now, let’s prepare the wrappers. Have about 10 sheets of rice paper ready. Fill a wide plate with warm water. Briefly dip one sheet of rice paper into the water until it softens, then immediately remove it. Be careful not to soak it for too long, or it might tear.
Step 7
Place a portion of the prepared cabbage filling onto the softened rice paper. Don’t overfill, as this can cause the dumpling to burst during cooking. Adjust the amount of filling as needed.
Step 8
Fold the bottom edge of the rice paper up to cover the filling, then fold in the sides to create a neat rectangular shape. Sealing it properly will prevent the filling from leaking out while frying.
Step 9
Heat a frying pan over medium heat with a generous amount of cooking oil. Carefully place the prepared dumplings into the hot pan. Fry them on both sides until they are golden brown and slightly crispy. The wrappers should become translucent and the filling cooked through. Enjoy your delicious, healthy dumplings while they’re warm!
