Ingredients
- Cabbage: about 1/4 head (cut into bite-sized pieces)
- Tofu: 1/3 block (diced)
- Chives (or Green Onions): a small bunch (cut into 3-4 cm lengths)
- Minced Garlic: 1/3 Tbsp
- Shrimp Paste Broth (for seasoning): 1 Tbsp (adjust to taste)
- Water: 500ml (or vegetable broth)
Cooking Instructions
Step 1
First, prepare a clear broth for a clean flavor. In a pot, add 500ml of water and a soup stock pack (containing ingredients like radish, onion, and white parts of green onions). Bring it to a rolling boil over high heat. (If you don’t have a stock pack, you can use plain water.)
Step 2
Once the stock pack (or kelp pack) is removed, add the prepared cabbage to the pot and bring it back to a rolling boil over high heat. Let it simmer for about 5 minutes until the cabbage becomes tender.
Step 3
When the cabbage is somewhat cooked, gently add the diced tofu. Stir carefully to avoid breaking the tofu, and simmer for another 2-3 minutes until the tofu is heated through.
Step 4
Once the soup is simmering, add the minced garlic and the cut chives (or green onions). Finally, season the soup with shrimp paste broth. Shrimp paste broth adds a wonderful umami depth and helps season the soup perfectly. Taste and add more salt or shrimp paste if needed.
Step 5
