Light & Delicious Chicken Breast Seaweed Salad

Are you on a diet? This recipe is for you as you work hard to reach your goal weight! I finally got to try the seaweed salad I bought at Big Market a few weeks ago. ‘Seaweed is good for the body… should I try it? It says all I need to do is add water, so it seems really convenient.’ I bought it with that thought and kept it in the fridge until now. The instructions suggest mixing it with rice, but I decided to get creative by adding chicken breast. Enjoy your meals with this simple, yet healthy and delicious salad!
Main Ingredients- Store-bought Seaweed Salad 1 pack (includes separate dressing)
- Chicken Breast 1/2 piece (approx. 100g)
- Fresh Bell Peppers (various colors) 1 handful, trimmed and cut to bite-size
- Sesame Oil, a drizzle
- Sesame Seeds, a pinch
Cooking Instructions
Step 1
Following the package instructions for the seaweed salad, pour in purified water until the seaweed is just covered, and let it sit for about 2 minutes. You’ll notice the seaweed gradually rehydrating and becoming plump.
Step 2
While the seaweed is rehydrating, prepare the chicken breast by boiling or steaming it, then shredding it or cutting it into bite-sized cubes. Wash the bell peppers, remove the seeds, and slice them thinly or dice them. Optionally, get your sesame oil and sesame seeds ready.
Step 3
Lightly drain the rehydrated seaweed. Combine the prepared chicken breast and chopped bell peppers in a bowl. Add the included dressing and mix everything thoroughly until well combined. Finally, drizzle with sesame oil and sprinkle with sesame seeds to finish. Your simple yet delicious diet salad is now complete!
