Low-Calorie Angelica Noodle Pho
Super Simple Diet Pho Recipe Using Angelica Noodles
Enjoy delicious pho without calorie worries! This recipe uses angelica noodles to create a soft, pho noodle-like texture. We’ll add plenty of thinly sliced beef and vegetables for a rich flavor in this low-calorie pho. You can enjoy a satisfying meal even while dieting!
Main Ingredients- 400g Angelica Noodles (Cheonsaechae)
- 200g Beef Brisket (Chadolbagi)
- 1/2 Onion
- 1 handful Bean Sprouts (approx. 50g)
- A little Cilantro (to taste)
- A little Vietnamese Chili (to taste)
Cooking Instructions
Step 1
First, rinse the angelica noodles lightly under running water to prepare them. This step helps remove any unique fishy smell.
Step 2
In a bowl, mix warm water (around 40-50°C or 104-122°F) with 1 tablespoon of baking soda. Add the rinsed angelica noodles and let them soak for about 10 minutes. The baking soda will soften the noodles, enhancing their chewy texture.
Step 3
After 10 minutes, drain the angelica noodles and rinse them thoroughly several times under cold water. This process transforms them into soft, jelly-like strands, perfect for using as pho noodles – we’ll call them ‘angelica noodle noodles’.
Step 4
Wash the onion, peel it, and then slice it into thick shreds about 0.5cm wide. Cutting them thickly will provide a satisfying bite.
Step 5
In a deep pot, combine 900ml of water, the thickly sliced onion, 4 tablespoons of soy sauce, and 4 tablespoons of fish sauce. Bring to a boil over high heat. This forms the base of your delicious pho broth.
Step 6
Once the broth is at a rolling boil, add the prepared beef brisket (chadolbagi). Beef brisket cooks very quickly, so you don’t need to stir-fry it separately; just add it directly to the boiling broth.
Step 7
After the beef is cooked through, add the ‘angelica noodle noodles’ you prepared earlier and simmer for another moment. Angelica noodles can become mushy if overcooked, so it’s important to boil them only briefly to maintain their texture.
Step 8
Finally, add a handful of bean sprouts and cook just until they slightly wilt. The bean sprouts will add a refreshing crunch.
Step 9
Serve the finished pho in bowls. Garnish with fresh cilantro and Vietnamese chili to your liking for an added boost of flavor. Your delicious low-calorie pho is ready!
