Ingredients- 100g melted unsalted butter
- 4 fresh eggs
- 2 tsp baking powder (for a light and fluffy texture)
- 40g coconut flour (the key to low-carb baking)
- 1/4 tsp fine salt
- 7-9 strips thick-cut bacon, cooked until crispy, cooled, and finely chopped
- 1/2 cup fresh chives (approx. 120ml cup), finely chopped
- 1/2 cup shredded cheddar cheese
- 1 Korean green chili (Cheongyang pepper), seeds removed and finely minced
Cooking Instructions
Step 1
Begin by cooking the bacon until it’s nice and crispy. Drain it on paper towels to remove excess grease, then finely chop it. Wash the chives, pat them dry, and chop them finely. Remove the seeds from the Korean green chili and mince it finely. Having all your ingredients prepped makes the mixing process much smoother.
Step 2
In a large bowl, whisk together the melted butter and eggs until well combined. Add the sifted coconut flour, baking powder, and salt. Mix until a smooth batter forms, ensuring there are no lumps. Finally, gently fold in the prepared chopped bacon, chives, minced green chili, and cheddar cheese using a spatula. Mix just until everything is evenly distributed; be careful not to overmix.
Step 3
Pour the batter into a prepared baking pan or mold. Bake in a preheated oven at 180°C (350°F). Baking time can vary depending on the size of your bread and your oven, but generally takes around 25-30 minutes. To check for doneness, insert a skewer or toothpick into the center; if it comes out clean, your bread is ready! If not, bake for a few more minutes. Let the bread cool completely on a wire rack before slicing and enjoying this delicious treat.
