Previously, we also made Halibut Kimchi Rolls and Halibut Cakes. This recipe utilizes leftover halibut to craft a satisfying burrito. It took quite some searching to find the perfect name for this dish! Enjoy two styles of burrito: one wrapped in a tortilla generously filled with fluffy egg crepes, and another featuring fresh halibut sashimi, aromatic perilla leaves, and tangy aged kimchi, all rolled up in seaweed. It’s a dish that looks and tastes sophisticated enough for entertaining guests.
Key Ingredients- 200g fresh halibut fillet
- 6 fresh eggs
- 2 stalks fresh chives
- 2 stalks fresh green onions
- Aromatic pickled ginger (to taste)
- 6 fresh perilla leaves
- 1 sheet well-fermented kimchi
- 1 tsp fresh wasabi
- 2 sheets of dried seaweed for kimbap
Cooking Instructions
Step 1
These are fresh domestic halibut fillets, sourced from pristine waters. They were delivered in oxygen-sealed packaging to maintain peak freshness.
Step 2
Carefully remove the halibut fillet from its oxygen-sealed packaging. Place it on the accompanying kitchen towel and gently pat to remove any excess moisture and oil. This helps to preserve the clean flavor of the halibut.
Step 3
Gently press the halibut fillet on both sides with the kitchen towel to absorb any remaining moisture. This step is crucial for reducing any potential fishy odor and enhancing the overall clean taste of the fish.
Step 4
Separate the flavorful fin meat and slice it into bite-sized pieces. For the remaining fillet, use a sharp knife to thinly slice it into sashimi. Sharpening your seafood knife beforehand will ensure a smoother and cleaner cut.

It’s ideal to place the sliced halibut sashimi on a bed of shredded daikon radish. If daikon is unavailable, thinly shredded cabbage makes an excellent alternative. Arrange the beautifully sliced halibut sashimi on top of the shredded vegetables.

Prepare the aromatic ingredients that will add layers of flavor to your burrito. We have fragrant perilla leaves, refreshing perilla leaves (included for those who might not favor the strong aroma of perilla), crisp green onions, and the delightful tang of well-fermented kimchi. Finally, apply a touch of wasabi. Then, roll it up tightly like a kimbap. Lightly moisten the edge of the seaweed with seasoned vinegar water (or plain water) to seal it securely, preventing it from unraveling. To ensure clean cuts, it’s recommended to sharpen your knife before slicing the rolled burrito, as seaweed can sometimes be tricky to cut cleanly.
