Essential Ingredients

  • 75g Jjamppong sauce (store-bought)
  • 630g Water
  • 50g Onion (about 1/4 of a medium onion)
  • 20g Green onion (white parts preferred)
  • 60g Napa cabbage (about 2-3 leaves)
  • 20g Carrot (about 1/5 of a medium carrot)
  • 30g Dried wood ear mushrooms
  • 10g Minced garlic (1 Tbsp)
  • 100g Fresh oysters
  • 100g Live clams (purged of sand)
  • 60g Squid (body or tentacles)
  • 10g Green chili pepper (1/2 pepper, optional)
  • 30g Bok choy (about 2-3 heads)
  • 16g Cooking oil (2 Tbsp)
  • 1 Frozen Chinese noodle packet

Cooking Instructions

Wash all the vegetables thoroughly. Then, thinly julienne them so they blend well into the Jjamppong. Slice the onion, green onion, napa cabbage, carrot, green chili pepper, and bok choy in the same way.

Soak the dried wood ear mushrooms in lukewarm water for about 15-20 minutes until fully rehydrated. Once softened, cut them into bite-sized pieces. You can strain the soaking water and reserve the clear liquid to add more depth to the broth, if desired.

Heat a deep pan or wok over high heat. Add the cooking oil, then add the minced garlic and sauté until fragrant. Once the garlic aroma is released, add all the prepared vegetables (onion, green onion, napa cabbage, carrot) and stir-fry quickly until they soften slightly. Stir-frying vegetables over high heat helps to prevent them from releasing too much water and preserves their flavor.

To the stir-fried vegetables, add the water (630g), store-bought Jjamppong sauce (75g), and the seafood (excluding oysters, so squid and clams). Bring to a boil over high heat, then reduce to medium heat and simmer for about 5 minutes to allow the seafood flavors to infuse into the broth. Add the green chili pepper at this stage for a touch of heat.

Once the broth has sufficiently simmered, add the frozen Chinese noodle packet and stir well as it cooks to ensure the noodles separate. As the noodles begin to cook, add the fresh oysters for the final simmer. Oysters can become tough if overcooked, so adding them at the end and cooking briefly will keep them tender and delicious. You can also add the bok choy at this point for a slight crunch.

Cook the Otsu Kitchen Shrimp Toast at 180°C (356°F) for about 20 minutes, and the fried Sweet and Sour Pork at 180°C (356°F) for about 10 minutes.
